Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 3 tablespoons Fezziwig's Meyer Lemon Olive Oil, divided
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh dill or parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry and place them on the baking sheet, skin-side down.
  3. Whisk together 2 tablespoons of Meyer Lemon Olive Oil, garlic, lemon zest, salt, and pepper.
  4. Spoon the mixture evenly over each fillet.
  5. Roast for 10 to 12 minutes for a standard 6-ounce fillet, or up to 14 minutes if yours are especially thick, until the salmon flakes easily with a fork.
