Bacon Olive Oil Roasted Brussels Sprouts

Fezziwig's Bacon Olive Oil is 100 percent plant-based, an olive oil infused with a smoky, savory flavor and no actual bacon or animal product in the bottle, which makes this a fully vegetarian dish despite the name. Most of it goes in before roasting, and a final tablespoon goes on raw at the end, since twenty-five minutes at 400°F will otherwise mute the smoky character you paid for.

Ingredients

  • 1.5 lbs Brussels sprouts, trimmed and halved
  • 2 tablespoons Fezziwig's Bacon Olive Oil, for roasting
  • 1 tablespoon Fezziwig's Bacon Olive Oil, reserved for finishing
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons balsamic reduction (or Fezziwig's Four Leaf Balsamic Vinegar, reduced by half)
  • 2 tablespoons grated Parmesan, for serving

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Toss the halved Brussels sprouts with the 2 tablespoons of Bacon Olive Oil meant for roasting, plus salt and pepper, on a baking sheet.
  3. Arrange the sprouts cut-side down in a single layer.
  4. Roast for 22 to 25 minutes, until the cut sides are deeply browned and crisp.
  5. Transfer to a serving bowl and drizzle with the reserved tablespoon of Bacon Olive Oil and the balsamic reduction while still hot, then toss gently.
  6. Top with grated Parmesan and serve immediately.
