Garlic Olive Oil Hummus

Fezziwig's Garlic Olive Oil is pressed from hand-picked Arbequina olives with the garlic, which gives it a milder, rounder garlic flavor than a raw clove blended straight into the dip. This version leans on the oil for garlic character and pulls back the raw garlic to just one clove.

Prep Time:15 min
Total Time:15 min
Yield:20 servings (about 2½ cups)
Difficulty:Easy
Category:Appetizer
Cuisine:Mediterranean

Ingredients

  • 1 clove garlic
  • 1 (19-ounce) can chickpeas, half the liquid reserved
  • 4 tablespoons lemon juice
  • 2 tablespoons tahini
  • 1 teaspoon salt, or to taste
  • 2 tablespoons Fezziwig's Garlic Olive Oil
  • Black pepper, to taste

Instructions

  1. Chop the garlic in a blender.
  2. Pour in the chickpeas, reserving about 1 tablespoon for garnish. Add the reserved liquid, lemon juice, tahini, and salt; blend until creamy and well mixed.
  3. Transfer the mixture to a medium serving bowl.
  4. Drizzle with Garlic Olive Oil and sprinkle with pepper. Garnish with the reserved chickpeas.
Fezziwig's Tip: Taste before reaching for more raw garlic. Because the Garlic Olive Oil already carries a full garlic flavor, adding a second raw clove on top of it usually pushes the dip from savory to sharp.
Make It Your Own: For a smokier variation, replace half the Garlic Olive Oil in the finishing drizzle with Fezziwig's Bacon Olive Oil, which is 100 percent plant-based.

Frequently Asked Questions

Why cut the raw garlic down to one clove?

Garlic Olive Oil already contributes garlic flavor; keeping the original two raw cloves on top of that oil would make the dip taste harsh rather than balanced.

Can this be thinned into a spread?

Yes, stir in a tablespoon of water for a consistency better suited to sandwiches.
