Tuscan Herb Olive Oil Focaccia

Fezziwig's Tuscan Herb Olive Oil is infused with oregano, basil, garlic, and rosemary, so it replaces the entire dried-herb lineup a classic focaccia recipe normally calls for. It goes into the dough, the rising bowl, and the pre-bake brush, seasoning the bread at every stage.

Ingredients

  • 2¾ cups all-purpose flour
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1 cup water
  • 4 tablespoons Fezziwig's Tuscan Herb Olive Oil, divided
  • 1 cup shredded mozzarella
  • 1 tablespoon grated Parmesan cheese

Instructions

  1. Combine the flour, yeast, salt, and sugar in a large bowl. Add the water and 1 tablespoon of the Tuscan Herb Olive Oil, and mix until the dough comes together.
  2. Turn the dough out onto a lightly floured surface and knead until smooth and elastic.
  3. Lightly oil a large bowl with 1 tablespoon of the Tuscan Herb Olive Oil; place the dough in the bowl and turn to coat. Cover with a clean, damp cloth and let rise in a warm place for 20 minutes.
  4. Preheat the oven to 400°F (204°C). Lightly grease a baking sheet.
  5. Punch the dough down and place it on the prepared baking sheet. Pat into a ½-inch-thick rectangle.
  6. Brush the top with the remaining 2 tablespoons of Tuscan Herb Olive Oil and sprinkle with mozzarella and Parmesan.
  7. Bake until golden brown, about 15 minutes.
  8. Cut into 12 pieces and serve warm.
