It’s the first month of the new year, and it’s time to try something with a little European flavor: Tortilla de Patatas. This dish, hailing from Valencia, Spain, is much like a potato and egg omelet and is easily cooked in one pan with lots of olive oil. You’ll have the opportunity to slice the vegetables, whip up the eggs, flip the tortilla, and plate this versatile dish.
Along with this “eggselent” entrée, you’ll enjoy a glass of red wine sangria and fresh salad to round out the meal.
